Tags I as an OSM mapper and cyclist would find very helpful:

- Regional cycle route sign
- Local cycle route sign
And also
- Walking route sign
Would second that proposal, both for cycling and for walking, but also for automotive routes - the touristic ones, that is. And while were at it, GR and for example the what in Dutch is the St. Jacobs schelpen which indicate the Compostella pilgrimage tracks.
